Ingredients
6 pieces bacon or sausage cooked & chopped (omit if making vegetarian)
½ onion medium, thinly sliced
1 bunch spinach or kale coarsely chopped
Salt and pepper to taste
½ teaspoon red chili pepper flakes
6 eggs (increase to 8 if making dairy free)
1 tablespoon almond milk (or milk of choice)
Salt and pepper to taste
¾ cup ricotta cheese (omit if making dairy free)
2 tablespoons Parmesan cheese shredded (omit if making dairy free)

BROCCOLI CHEDDAR: 1 1/2 c broccoli with 1/4 c shredded cheese
SUN DRIED TOMATO + SPINACH: 1/4 c sun dried tomatoes, 1 c spinach & 1/4 c goat cheese or feta
BELL PEPPER & ONION: 1 red bell pepper, 1/4 red onion, 1/4 c feta
MUSHROOM + GORGONZOLA: 1 c mushrooms, 2 tablespoons fresh thyme, 1/4c gorgonzola crumbles
1. Pre heat oven to 350 degrees
2. Place all veggies in muffin cups
3. Whisk together Eggs, Milk of choice and cheese (omit if making dairy free)
4. Pour egg mixture over veggies
5. Bake in over for 20 minutes or until middle is firm.
